Easy White Bean Soup

Baby it's cold outside! This fast and healthy soup recipe couldn't have come at a better time to help keep us warm and cozy during this winter season.

Makes 4 Servings

Serving Size: 2 Cups

INGREDIENTS

  • 1 TBSP oil of your choice
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup carrot, chopped
  • 1/2 cup celery stalk, chopped
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • ½ tsp oregano
  • ½ tsp black pepper
  • 3 15-ounces cans white beans, drained and rinsed
  • 2 cups spinach

DIRECTIONS

  1. In a large pot or saucepan, heat oil & onions over medium-high heat. Cook until onions are translucent, about 5 minutes.
  2. Add the garlic, carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 3 minutes.
  3. Add vegetable broth and beans to simmer for 15 minutes.
  4. Stir in the spinach for about 2 minutes.
  5. Remove from heat and serve immediately.
