Baby it's cold outside! This fast and healthy soup recipe couldn't have come at a better time to help keep us warm and cozy during this winter season.

Serving Size: 2 Cups
INGREDIENTS
- 1 TBSP oil of your choice
- 1/2 cup onion, chopped
- 2 garlic cloves, minced
- 1/2 cup carrot, chopped
- 1/2 cup celery stalk, chopped
- 6 cups vegetable broth
- 1 tsp dried thyme
- ½ tsp oregano
- ½ tsp black pepper
- 3 15-ounces cans white beans, drained and rinsed
- 2 cups spinach
DIRECTIONS
- In a large pot or saucepan, heat oil & onions over medium-high heat. Cook until onions are translucent, about 5 minutes.
- Add the garlic, carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 3 minutes.
- Add vegetable broth and beans to simmer for 15 minutes.
- Stir in the spinach for about 2 minutes.
- Remove from heat and serve immediately.
