Lentil Chili

Calling all busy moms! Say hello to a fuss-free yet delicious lentil chili recipe that'll satisfy taste buds and keep the family warm and cozy.

Makes 4 servings

INGREDIENTS

  • 4 cups canned crushed tomatoes
  • 1 cup red lentils
  • 1 red bell pepper, chopped
  • 1/2 yellow onion, chopped
  • 4 garlic cloves, minced
  • 4 cups organic vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp sea salt
  • 1 cup of cilantro

DIRECTIONS

  1. Heat 4 TBSP of vegetable broth in a pot.
  2. Add the bell pepper, onion, and garlic. Sauté for 5 minutes.
  3. Drain and rinse the lentils. Add the lentils, tomatoes, and the rest of the broth to the pot and bring to a boil.
  4. Add the spices and cook over medium heat for 20 minutes.
  5. Add cilantro, stir, and cook for another 10 minutes.
  6. Adjust seasonings, as needed.
  7. Store in a covered container for up to 5 days in the fridge.
