No-Egg French Toast

Makes 4 Servings

Serving Size: 1 slice

INGREDIENTS

  • 1 TBSP ground flaxseed
  • 1/2 TBSP maple syrup
  • 1 cup milk of your choice
  • 1/2 TBSP nutritional yeast
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 4 slices whole-grain bread

TOPPINGS

  • 2 cups fresh berries
  • 1 cup chopped walnuts

DIRECTIONS

  1. Whisk together flaxseed, maple syrup, milk, nutritional yeast, cinnamon, and vanilla extract in a small bowl.
  2. Transfer mixture into a bowl large enough to accommodate dipping bread slices.
  3. Spray your pan with cooking spray or the oil of your choice and heat on a medium temperature.
  4. Quickly dip slices of bread into the mixture.
  5. Cook until browned on each side. Toast may be brown on the outside and soft in the middle but it will set more as it cools.
  6. Top with fresh berries and chopped walnuts.
