INGREDIENTS
- 1/2 cup crumbled firm tofu
- 2 slices whole-grain bread, toasted
- 1/2 avocado, sliced
- 2 tomato slices
- Salt and lemon pepper, to taste
DIRECTIONS
- Rinse and crumble tofu.
- Spray pan with cooking spray or oil of your choice and heat on a medium temperature.
- Add crumbled tofu and scramble until desired set.
- Top the two pieces of toast with tofu, tomato slice & avocado
- Season to taste.
