Warm Turkey Taco Salad

SALAD INGREDIENTS

  • 4 cups lettuce of your choice
  • 1/2 cup beans of your choice, drained & rinsed
    • Black
    • Pinto
    • Kidney
  • 1/2 cup onion, chopped
  • 1/2 cup mushrooms, chopped
  • 1/2 cup tomatoes, chopped
  • 1/4 cup corn kernels, drained & rinsed
  • 8 ounces ground turkey
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp cinnamon

DRESSING INGREDIENTS

  • 1 cup fresh pico de gallo
  • 3 TBSP oil of your choice
  • 2-3 tsp yogurt of your choice
  • 3/4 tsp sea salt
  • 1/4 tsp ground black pepper

DIRECTIONS

  1. Heat oil and onion in a pan. Cook until onions are translucent.
  2. Add mushrooms, beans, corn, & tomatoes. Cook for another 2-3 minutes.
  3. Add turkey, cumin, chili powder, and cinnamon. Cook, stirring constantly until turkey is browned (about 5 minutes).
  4. Add dressing ingredients to a blender & blend well.
  5. Add cooked mix to your lettuce and serve with 2 TBSP of dressing.
